1 head cauliflower, chopped
&amp;frac12; C uncooked rice
30 oz chicken broth or vegetable broth
2 C water &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp;&amp;nbsp;

1 C skim milk
1 C fat free half and half

Saut&amp;eacute; the onion and celery in oil until tender. &amp;nbsp;Add the next 4 ingredients, bring to a boil, cover, simmer for 20 min. &amp;nbsp;Puree with an immersion blender or transfer to a blender. &amp;nbsp;Blend until smooth. &amp;nbsp;Pour back into pot and add the milk. Heat through and serve with shredded cheddar on top if desired.

3 T sour cream

Saute the onion in the butter until tender. &amp;nbsp;Add the potatoes and broth, bring to a boil, reduce to a simmer, and cook until potatoes are tender. &amp;nbsp;Stir in the ham, cheese, and sour cream. &amp;nbsp;Heat through and serve.

Saute the bacon and the onions in oil until bacon is crisp and onions are tender. &amp;nbsp;Add the next 7 ingredients to the onions, bring to a boil, reduce to a simmer and cook until carrots are tender. &amp;nbsp;It took about 30 minutes for me. &amp;nbsp;Stir in the almond milk or milk of your choice and puree with an immersion blender until smooth. &amp;nbsp;Sprinkle with bacon bits before serving if desired. &amp;nbsp;This soup freezes well.

Saute the onions and peppers for about 5 minutes. Add the ginger and garlic and cook another minute. Add the next four ingredients and bring to a boil. &amp;nbsp;Reduce to a simmer. &amp;nbsp;Add the remaining ingredients and simmer until heated through and ready to serve. &amp;nbsp;Don&amp;rsquo;t cook too much longer or the peas will get bland and the shrimp will get tough.

8 C vegetable broth

1 chopped zucchini
1 &amp;frac14; t kosher salt
&amp;frac12; t black pepper
15 oz great white northern beans, rinsed and drained

Saute carrots and next 4 ingredients in oil until just tender.&amp;nbsp; Add broth, tomatoes, zucchini, salt and pepper.&amp;nbsp; Bring to a boil, reduce to simmer and cook until all veggies are tender.&amp;nbsp; Stir in beans and heat through.&amp;nbsp; Serve and top each serving with Parmesan and one teaspoon of basil pesto.

This soup can take other additions as well:&amp;nbsp; cooked rice, uncooked pasta&amp;hellip;&amp;nbsp; Add with the beans.

1-2 C chopped ham
1 t chicken base
3 C chicken broth
12 oz milk
9 oz fresh spinach, chopped
&amp;frac12; t salt
&amp;frac14; t pepper
1 C shredded cheddar

Cover the potatoes with just enough water to cook. &amp;nbsp;Boil until softened. &amp;nbsp;Cook onions in oil until softened. &amp;nbsp;Stir in the flour, gradually add chicken broth. &amp;nbsp;Cook until it begins to thicken. &amp;nbsp;Add ham and milk and continue to cook. &amp;nbsp;When potatoes are softened, add to big pot along with everything else. &amp;nbsp;If the potato water has cooked off some, just dump it in with the potatoes. &amp;nbsp;This will help thicken the soup. &amp;nbsp;Whirl a bit with the immersion blender. &amp;nbsp;We think it&amp;rsquo;s best with some chunks left. &amp;nbsp;

Boil potatoes in water, when tender, mash right in water until you have reached the desired consistency. &amp;nbsp;Saute the onions in the oil until they are tender. &amp;nbsp;Add the seasonings, peppers, and chilies. &amp;nbsp;Saute for 5 more minutes. &amp;nbsp;Add the cooked potatoes and heat through. &amp;nbsp;Stir in the sour cream, milk, and cheese. &amp;nbsp;Simmer until heated through. &amp;nbsp;Avoid boiling and stir frequently to keep the cheese from sticking.

    <title>Broccoli and Chicken Noodle Soup</title>

2 C chopped onion
1 C sliced fresh mushrooms
3 T oil
&amp;frac12; t minced garlic
&amp;frac14; C flour
4 C low fat milk
1 &amp;frac12; C chicken broth
1 t pepper
&amp;frac34; t salt
2 C cooked pasta, cut into small pieces if necessary
2 C shredded cheddar
4 C chopped, cooked chicken or turkey
3 C diced broccoli
Saute onions and mushrooms until tender.&amp;nbsp; Add garlic and cook briefly.&amp;nbsp; Stir in flour thoroughly.&amp;nbsp; Gradually add the milk and broth and cook until thickened.&amp;nbsp; If the broccoli isn&amp;rsquo;t cooked, add at this point.&amp;nbsp; Otherwise, add it just before serving to prevent it from overcooking and losing its color.&amp;nbsp; Add remaining ingredients, heat through and serve.&amp;nbsp; Serves 8.

1 C diced onions
&amp;frac12; C diced celery and red or yellow pepper
minced garlic to taste
1 &amp;frac12; t minced fresh thyme
2 T flour
1 &amp;frac12; C chicken broth
12 oz evaporated milk
15 oz diced tomatoes, drained
15 oz creamed corn
2 C chopped chicken or turkey
1 T hickory flavored BBQ sauce
&amp;frac14; t salt and pepper
Saute onions, bacon, celery, and peppers in olive oil until tender.&amp;nbsp; Add garlic, thyme, and flour.&amp;nbsp; Stir until blended, add milk and broth, bring to a gentle boil and cook until it thickens some.&amp;nbsp; Simmer and add remaining ingredients.&amp;nbsp; Serves 5 generous portions.&amp;nbsp; From the March 09, Healthy Cooking issue.

dash of salt
&amp;frac12; C nondairy creamer, refrigerated
&amp;frac14; t vanilla
2 T minced fresh basil for garnish - optional
Add, bring to a boil, reduce to simmer for 30 min
blend until smooth.&amp;nbsp; Return to pot.&amp;nbsp; Add creamer and vanilla.&amp;nbsp; Heat through but don&amp;rsquo;t boil.

1 t Italian seasoning

&amp;frac14; t pepper
Bring to a boil, reduce to simmer, cook for ~40 min more
1 lb cooked chicken or turkey&amp;nbsp; &amp;nbsp;
1 C uncooked macaroni
Stir in, cook until done, serve.
Sprinkle with Parmesan or mozzarella if desired before serving.

Stir in herbs and flour and gradually add: 
3 C chicken broth
Cook and stir until thickened.&amp;nbsp; 
Add:
1 C white rice
8 C additional chicken broth
&amp;frac34; C diced green chilies
15 oz or more white beans, cooked, drained
1 lb cooked, diced chicken or turkey
Simmer for 20 minutes or until rice is tender.&amp;nbsp; Serves 12
